A Thanksgiving Recipe from Our Founder

Steve Wilson bakes his mother's Candied Yams

This year, of course, we aren’t traveling and we know most of you aren’t either, but it doesn’t mean that we can’t remember those great times. – 21c co-founder Steve Wilson.

As we approach Thanksgiving, we asked co-founder Steve Wilson to share one of his favorite Thanksgiving recipes and he chose his mother’s delicious Candied Yams.  It is a simple dish packed with flavor and promises to fill your home with scents that take you back to those big family gatherings!

Steve’s Mother’s Candied Yams

Ingredients

6 medium sweet potatoes

1 c brown sugar

¼ c butter

¼ c water

½ t salt

2 whole cloves

Directions

Heat Oven to 375°F

Peel & cook potatoes in tap water (just barely cover) Bring to boil until you can insert a toothpick, (doesn’t have to be especially tender since will bake).

While the potatoes are cooking, prepare syrup.   Combine brown sugar, butter, water, salt and cloves in saucepane and boil 5 mins, stir occasionally

Once potatoes are done, remove from water and let cool.  Once cooled enough to touch, cut potatoes as you please, but at least once lengthwise.

Transfer cut potatoes to large baking pan.

Pour syrup over potatoes and then put in oven to bake for 45 min. About halfway through, turn potatoes.

Pull potatoes out of the baking pan and place in your favorite serving dish.
