Spring-Heeled Jack
A little French here, a little Italian there and a good dose of historic USA makes for a Derby-time magic trick. Here’s how we do it. With distillery license #1, Laird’s Applejack has been creating this fruity yet strong liquor for over 300 years. Add a little aromatic and bittersweet Nocino made from unripe walnuts and a traditional woody Curacao and you suddenly have something masquerading as the king of liquors, Bourbon. Much like the Victorian legend known as “Spring-Heeled Jack”, who masqueraded as the devil and spent his nights freaking people out with his antics. But in true magician style, we’re obscuring the ruse, adding a little fresh mint, sweetness and bubbly and “Voila!” – you’re in sparkling Mint Julep heaven, not knowing exactly how you got there.
Recipe
1.5 oz Laird’s Bonded Applejack
.5 oz Nux Alpina Nocino
.25 oz Pierre Ferrand Dry Curacao
.25 oz Simple Syrup
Mint Sprigs to season glass and garnish
Combine all ingredients and shake with ice. Strain over crushed iced in a Collins glass that is seasoned with mint. Top with Sparkling Wine. Add Mint Sprigs to garnish
