In honor of the 10th Anniversary of 21c Louisville and Proof on Main, we’re hosting a series of guest chef dinners featuring the executive chefs from each of our 21c restaurants.
In August our own chef Mike Wajda has invited Josh Munchel of Counting House at 21c Durham for a menu collaboration. Munchel’s manly dinner will kick off with a handful of shellfish dishes like fresh shucked oysters, tobacco cured tuna and a Durham clambake with corn, okra and Woodland Farm potatoes. The main course will launch into a beefsteak lover’s dream with the Woodland Farm Bison Steamship with roasted beast accompanied by charred veggies. Dessert will provide a light foil to the meat-centric main course with a Passion Fruit Summer Trifle with peach and white chocolate. In true beefsteak form, dining sans utensils is encouraged.
