A nod to the famous rainbow flag as first conceived in 1978, the name ‘Prism Chasing’ represents a love for the beauty of diversity. This cocktail is inspired by both the essence of Pride—a celebration of a strong sense of self and community, and light— a product of beautifully colorful parts. Proceeds from each cocktail benefit the LGBTQ Center of Durham.
Prism Chasing
1 oz raspberry infused Don Q Cristal Rum*
1 oz Mattei Cap Corse Blanc
0.5 oz jasmine-lemon-raspberry syrup**
0.25 oz lemon juice
*For raspberry infused rum: Combine 1-pint raspberries with 1 bottle of rum in a 1-quart cream whipper. Charge with one charger, shake, then add a second charger and shake. Let infuse for 3 minutes. Vent and strain.
**For jasmine-lemon-raspberry syrup: Combine 1-quart sugar, the peel of 12 lemons and 1-pint raspberries in a vacuum seal bag and seal. Let mixture rest 4 hours or overnight. Add 1-quart hot jasmine pearl tea to sugar until dissolved. Strain.
Combine all ingredients in a shaker with ice. Shake until chilled and then double strain into a Nick & Nora glass. Garnish with several jasmine buds.
