On Monday, March 21st, executive chef Matthew McClure will join forces with chef Rob Newton, of Brooklyn’s Nightingale 9, for a one-night-only South x South Brooklyn dinner.
The guest chef dinner will take place at Nightingale 9 in Brooklyn, NY and feature dishes from both chefs, with a number of ingredients being sourced directly from Arkansas, where McClure and Newton were both born and raised. Menu highlights are scheduled to include:
Chicken Liver Mousse with rhubarb jam on toast (McClure)
Grilled Scallion Pancake with charred cabbage, sesame and tofu (Newton)
Sorghum Roasted Duck with sweet potatoes and kale-pecan relish (McClure)
Hanna Farm Grits Congee with veal cheeks, brown butter, everything spice (Newton)
Wok Tossed Pig Tails with salsa mocha, garlic, green onions and chili (McClure)
Braised Collards with Tessa and mustard seeds (McClure)
“Matt and I met through the Southern Foodways Alliance and became quick friends after learning that we both were from Arkansas and shared similar stories,” says Newton. “It’s great to be in a position to host a dinner here in New York with a fellow chef and friend from Arkansas who is doing great things back in my home state.”
“I’m excited to team up with such a talented chef and fellow Arkansas native on this dinner,” says McClure. “I’m bringing a number of local ingredients straight from Northwest Arkansas to ensure that diners get a true taste of the South, including Tessa cured from local pigs, pecans, onions, sweet potatoes, and chicken livers from local, pasture-raised chickens.”
The a la carte menu will be available in the dining room and at the bar for walk-ins.
