Louisville Lamb Jam

$25Freedom Run Farm presents Louisville’s first annual Kentucky Proud Lamb Jam, a celebration of the culinary heritage of lamb in the Commonwealth, at 21c Museum Hotel on Sunday, April 8 from 2-4pm.
Join us for Michter’s bourbon cocktails paired with lamb canapés from various parts of a nose to tail approach to this amazingly versatile animal. Chef Mike Wajda of Proof on Main will perform a whole lamb butchery demo with Chef Ouita Michel. Chefs Ryan Smith and Jeff Dailey of Harvest Restaurant will be highlighting the leg of lamb with an in-depth look at varied ways to utilize this cut. Visit the Offal Room with Chef Noam Bilitzer of Proof on Main to sample sustainable and innovative ways of utilizing every part of the animal.

The Ultimate Farm to Table Experience
The day begins at Freedom Run Farm, where you will receive a morning tour of the farm, meeting shepherds, learning its practices and visiting with the herd. Following the farm tour, you will join the Superior Meats team as they carve up a lamb from carcass to the cuts that chefs use. Superior Meats will teach you butchering techniques that you can use at home! Once you’ve mastered the takedown, you and your guests will head to Proof on Main, where Chef Wajda and his team will cook a delicious lamb meal, giving you the true gourmet farm to table, traceable experience!
