Chefs Ryan Smith and Jeff Dailey of Harvest Restaurant will be highlighting the leg of lamb with an in-depth look at varied ways to utilize this cut. Visit the Offal Room with Chef Noam Bilitzer of Proof on Main to sample sustainable and innovative ways of utilizing every part of the animal.
